Shakshuka

Ingredients:

3 Tablespoons olive oil

1 large onion, halved and thinly sliced

1 large bell pepper, seeded and thinly sliced

1 teaspoon ground cumin

1 teaspoon sweet paprika

⅛ teaspoon cayenne, or to taste

1 (28-ounce) can whole plum tomatoes with juiced, coarsely chopped

¾ teaspoon salt, more as needed

¼ teaspoon black pepper, more as needed

5 ounces feta cheese, crumbled (about 1 ¼ cups)

6 large eggs

Chopped cilantro, for serving

Hot sauce, for serving

Process:

Step 1

Sautee vegetables in olive oil until soft

Step 2

Add spices and stir until fragrant.

Step 3

Add tomatoes, salt, and pepper.

Step 4

Create wells in the vegetable/tomato mix and raw eggs. Simmer until eggs are softly cooked. (If eggs are not cooking evenly, cover the pan or move to oven)

Step 5

Sprinkle with cilantro and feta
